Earthy, New Year, and Learning.

It’s my belief that everybody is pretty aware of the worldy sad stuff and wants to be a super hero and save the world. That is why we recycle, eat organic, choose “smart” cars, become vegetarian, donate, and buy stuff that helps others in need. How much do we care for the planet?
The answer is on your plate.
Starting in the new year on January 3 I am going Vegan. Cheers!!! It’s going to be fantastic right? right?
I am all ready a happy vegetarian, but I feel the need to go and take this next step. It feels right. I tried before, a little bit more than a year ago, but I was forcing it. I wasn’t ready, so it was too dificult for me.
Now, I will be doing the 21 days quick start . For just 21 days I will eliminate sugar, coffee, alcohol, dairy, and eggs. I don’t drink much coffee anyway, but I do have sips here and there from my husbands cup. Alcohol is okay. It’s not going to be hard to give up if I just do it for 21 days. Eggs, mmm I don’t buy eggs, but if they are in a muffin I eat them so I have to watch for that. Do we really have to talk about sugar. Do you know me? My last name should be Azucar. Sugar and I are more than best friends, we are lovers. Not eating sugar is going to be harder than when I stop eating meat. I love candy. I love cookies. It will be hard. I am going to sweat; I may cry and for sure I will be pissed off at Norbert Rillieux, the inventor of sugar. Actually, the inventor of the processing evaporator machine that refines sugar, but since I couldn’t find out who invented sugar I am going to give him the credit for it. I am going to be vegan! And I am not going to eat sugar. Plus, I can stil indulge in a very delicious and naturally sweet apple. Before I know it I am going to be like “cookie who?”
I am looking forward to seeing the change in my body and mind. If after the 21 days I don’t see a dramatic change, I will go back to being just a vegetarian. I am really excited about learning more about Veganism though. I will be learning new recipes. I am sure I am going to love it. I can’t wait. The best part is that I am not alone. Like always my partner in crime is going to be there with me to help me and support me through it. I am probably going to re-watch Food Inc., Forks over Knives, and anything and everything else that’s informative and supports my beliefs.
Do you have any recipes I need to know? What do I need to see and read to reinforce my decision? Help me!!!
