First Week. Good. Vegan.

It has been a week since I started doing the whole Vegan thing. It has been AMAZING! Not hard it all. And I think the fact that I decided to do it for just 21 days made it easier because it takes the pressure away. I feel so good I want everybody to do it. I may keep doing it after, but for now I just don’t worry about that. Being part of the 21 Vegan days makes things much easier. Because they give you ideas about what to eat and you have support from other newbies. For inspirational support I also read some other peep’s vegan blogs. On my first Vegan day I even got a recorded call from Alicia Silverstone cheering me on and giving me some helpful tips. That sounds kind of corny, but it was cool.
Yeah, I have to say that the first week seems really easy. The sexy man had some difficult moments at work when the company brought cheese pizza. Can you imagine how hard is to smell that yuminess? I am a pizza lover, and he is too. But he stayed strong and ate his very delicious lentil soup that I packed for lunch.
My hardest moment was when I was dealing with some not very welcoming news and then to cheer my heart I decided to go shopping at Whole Foods and they were giving away FREE cheese soup. Bastards! Yep, every time I have gone in the past they have never, ever given anything like that and of course that day they had to give away cheese soup. It’s hard to say no when you are really busy or when you are dealing with unwanted news or feelings. But we stayed strong and we did it. We said NO, because I didn’t want to be like “shit why did I do that? That was so stupid and now I feel like shit”.

I feel so good I don’t have enough words to explain it. I want to sing. In one week I already see some things changing to the positive. Now I am like one of those girls that are always smiling and jumping around out of sheer happiness. Oh wait, I have always been like that. Even though I have always been a happy girl, I’ve had no real reason to change my eating habits other than the fact that I want to help the planet. I can say that my first week of Veganisim makes me feel more content, less dramatic, less sensitive, and overall I see things with better eyes. I just feel good about myself, where before I felt bloated, and negative about some things in my appearance. Like I remember after eating cheese pizza, my belly would just grow, and grow and grow to the point that I would look a little bit pregnant. Oh those times seem so far away.
Here is some of the stuff that we cooked one night in the past week.
For starters, I made Kale chips. And to make good use of the heat of the oven I also baked onions, spaghetti squash and potatoes. Kale is really good for you. Its considerated a super food for all it’s nutrients and benefits.
In this picture you can’t see the onions and the potatoes because they are wrap in foil paper in the very back of the oven. So that night we had kale chips and garlic hummus sandwich on Ezequiel bread, and we saved the spaghetti squash, the potatoes and the onions for the next day. Super man had the potatoes the next day for lunch and for dinner he sauteed the spaghetti squash. We had leftovers for the next day for lunch too. So what we baked in that day lasted for 3 days!
